what are the reasons for choosing one pot bias adjustment per two tubes, versus single tube bias adjustment.
    The simpler the better?

Yes - Using one bias pot for the two left tubes and one bias pot for the two right tubes keeps the bias circuit simpler. Most people will be using a matched quad of output tubes anyhow, so a further refinement of the bias circuit is not really necessary.

BOB: The reason why I ask is: I ordered a quad set of EH kt88 and they came with stickers showing 39 and 40 written on them, I been told that is OK. that made my juices circulate fast, what about if I found myself with two different matched sets lets say 39 one pair and 41 the other one, would I be in trouble? will the M-125 take it without adversely affecting anything ?

Those tubes are so closely matched that they will work fine in there ..
