When you put two diodes in series you get more reverse current blockage than using just one diode. That's why two diodes are used on each leg of the power transformer secondary.
On another note ..
The power schematic at the link you provide for the "Dynamutt" at > Dynamutt ST-70 power supply is IMHO not really any better than the stock power supply for the original ST-70. That power supply on the Dynamutt is a 47, 23.5, 23.5, 23.5 uF @ 700 VDC. The original ST-70 had a 30, 20, 20, 20 uF @ 525 VDC. Since the ST-70 has a B+ of 430 volts or so, the 525 VDC quad cap rating was fine for the original ST-70. The Dynamutt does not really improve on the amount of DC power storage - just voltage handling. Having just a SINGLE 23.5 uF quad cap section to run TWO output transformers is OK up to 20 - 25 watts and then the power supply "craps out". The Dynamutt system also has no "on board" power supply for their driver circuit like the VTA driver circuit. The 47, 23.5, 23.5, 23.5 (117.5 total) runs the whole amp and is about as undersized as the original Dynaco ST-70 amp which had just 90 uF total DC storage ..
On the other hand, the VTA ST-70 amp KIT has a 170 uF quad cap @ 550 volts with two sections wired together to power the two output transformers (100 uF total and about 4.5 times the Dynamutt's 23.5 uF total for the output transformers). The VTA driver circuit also has another 294 uF for just the driver board. This is one of the main reasons (a large and more modern power supply) that the VTA ST-70 amp KIT, although rated at "35 watts per channel", is actually a 45 watt per channel amp. Independent test of the VTA ST-70 amp KIT
The VTA ST-120 adds another 165 uF or DC storage for just the two output transformers (265 uF total) and has the same 294 uF on the driver circuit as the VTA ST-70. The VTA ST-120, although rated at 60 WPC, is also conservatively rated, and will do > 70 WPC over most of the audio band.
