If you had two of them and wanted to use one for each channel, how would you hook them up?

be ok for a PA system, but if hifi is the goal - no.
I would sell both and buy a vta120 for the money. Or change speakers to
something more sensitive. Or buy 2 MkIII .

Do they not have a mono-stereo switch? If so, that is your answer.
Each individual amp becomes, effectively a 4-output-tube mono amp.

2 separate speakers it will work, but if driving one speaker chances are that
the amps will counteract each other due to differences in amplification.
